I grew up in a family that liked to bake and there was no Christmas without a cake. If you grew up in Ghana in a home like mine then you’ll testify that the Ghanaian Christmas time is not complete without some Jollof rice and Pound Cakes. My lovely mom would have us (yes, everyone in the house was involved) bake enough cakes for the entire neighbourhood.
With all this knowledge of how saturated fats are bad for your health and knowing that regular cakes are packed high with these bad fats you may be working really hard to cut down on. I am sharing with you how I get to continue my families Christmas tradition without giving my neighbours blocked arteries.
What I need?
Cake flour 3 cups
groundnut oil 1 1/2 cups
Sugar 2/3 cup or substitute with a sweetener
3 large eggs
cinnamon powder 1 teaspoon
baking soda 1 teaspoon
If you know how to bake cakes then you would have noticed I have substituted the butter or hydrogenated fast ( margarine) with vegetable oil which cuts sown drastically on the saturated fast while adding more unsaturated fats(which is healthy for your heart and arteries).
Mix the oil and sugar, add the eggs and beat until creamy.
Mix the dry ingredients separately and add. Continue mixing to get a creamy consistency lighter than that of regular cake butter.
Pour into you already creased baking tin and place in a pre-heated oven for about 35 minutes.
This makes a delicious healthy Christmas treat you can share with friends and family. Go ahead and enjoy the holidays. Bake some treat.
